Skillets, omelets and lunch till 2

Breakfast is the heart of Fay's, but not the whole story: the famous breakfast skillets, omelets, eggs Benedict, ham and eggs, home fries and homemade muffins.

Lunch runs until 2 pm, with newer additions like chicken chipotle tacos, country fried steak and a carnitas skillet.

A Carlisle breakfast institution

Fay Boychock opened Fay's Country Kitchen in 1973, first at 210 N. Hanover Street in a former paint store. Today the diner is on South Hanover, one block south of the square, with its Coca-Cola memorabilia, checkerboard floor and counter stools.

The diner has kept its name, its menu and its old-school style: breakfast is still nearly 90% of the business, and it is still cash only. As office manager Cristina Morales puts it: "Everybody knows this place, that's why we want to continue doing the same thing."
